Another foot of snow is barreling towards us, and I once again retreat to my kitchen and my comfort food. Here is a quick and easy chicken parmesan recipe if you’re looking for a satisfying crowd pleaser. (I apologize for the horrible quality of these photographs, but it was a dark and gloomy night, and I don’t own a floodlight or yet possess excellent Photoshop abilities.)
This is our mother Avis’s recipe for meatballs. It’s the first time I’ve made them without her help and I think they came out pretty well. You could, of course, have these with spaghetti, but we ate them tonight in a sandwich with provolone cheese and a salad with balsamic vinaigrette dressing.
