Easy Chicken Parmesan

Another foot of snow is barreling towards us, and I once again retreat to my kitchen and my comfort food. Here is a quick and easy chicken parmesan recipe if you’re looking for a satisfying crowd pleaser. (I apologize for the horrible quality of these photographs, but it was a dark and gloomy night, and I don’t own a floodlight or yet possess excellent Photoshop abilities.)


You’ll need:

1 package of boneless chicken breasts
Olive oil
1 egg
Italian bread crumbs
6 slices of provolone cheese
Shredded mozzarella cheese
Parmesan cheese
1 jar of spaghetti sauce

Get cooking:

Preheat the oven to 400 degrees. Rinse the chicken in cool water. Set out two bowls. In one bowl, crack and whisk the egg. In the other, sprinkle a generous amount of italian bread crumbs.

In a non-stick skillet, heat about 3 tablespoons of olive oil over medium heat. When the oil is shimmering, dip your chicken breasts first into the whisked egg, then into the breadcrumbs until coated. Lay them down in the skillet. Still on medium heat, cook the chicken breasts on one side until golden brown, then flip them over and cook the other side. You’ll know they’re done when there is no more pink meat in the middle of the chicken (cut a small sliver in the chicken and pull apart with a fork to check). Add more olive oil if you need it and turn down the heat if they start to brown too much before they’re cooked all the way through.

As the chicken is cooking, prepare a casserole dish for them by pouring in enough spaghetti sauce to cover the bottom of the dish.

Swirl the sauce around with a spoon so that the whole bottom is covered. When the chicken breasts are done cooking, place them in the dish on top of the sauce. Pour more spaghetti sauce on top, using as much or as little as you like, and then layer on the slices of provolone cheese, shredded mozzarella, and sprinkles of parmesan.

Place this in your preheated oven, uncovered, for about fifteen minutes just until the cheese melts and starts to bubble and brown. Enjoy!

We had this over pasta with steamed zucchini. Well…I had steamed zucchini. Phil thinks green vegetables are too green, so he had his slathered in teriyaki sauce..
