Meatball Sub

I’d call it a Manwich, but that might be under copyright by Sloppy Joe. I’m telling you, as a hearty Italian girl, I can professionally argue there is nothing more satisfying than a good old fashioned meatball sub. The man I cohabitate with seems to agree by the looks of this picture.

So if you are in need of a little comfort, spread your palms and unhinge your jaw for some cheesy, meaty, saucey, bready goodness. Yah, I’ll go there.

This recipe is my mom’s. It is really fast and easy – especially when you are like me and you don’t really measure ingredients too carefully. Sorry Ina.

Mix the following all together in a large bowl:
-1 pound of hamburger meat (Not the veal mix! Save the baby cows!).

-about 1/2 tsp of garlic powder
-1 egg
-3 pieces of white bread or very soft wheat bread (no grains!) with their crusts peeled off. Soak these in milk and then squeeze most of the milk out (two squeezes is fine).
-1 Tbsp of cornstarch
-dash of crushed red pepper flakes
-less than a teaspoon of salt
-a dash of pepper and parsley.

Mix all together with your hands and roll into balls. About an inch in diameter or bigger if you don’t mind cooking them longer. Put them on a tin-foil covered pan and cook in the oven until browned. Check the largest one to make sure it’s cooked all the way through.

For the last few minutes of the meatballs I put two portuguese rolls in the oven with some provolone cheese – to get them warm and crunchy. I added red sauce and arugula when I put it all together. My friend Isaac’s mom adds grape jelly for an extra sweetness – try it if you are feeling adventurous!
