Earthy and Wholesome Pasta

I know this title probably sounds strange, but it’s all I could think of for this creation I gave birth to last night (too much?). Two nights ago we had a pasta dish, and me being the waste-not want-not person that I am, I had leftover pasta that simply could not be trashed. Actually it was a combination of linguine and thin spaghetti since I am all about saving some food dollars.

Anywho, I randomly walked through the supermarket and grabbed some items. Most items were already at home. This is what I used.

-cooked pasta

-olive oil

-1 clove of chopped garlic

-several sundried tomatoes

-bean sprouts

-can of cannellini beans

-walnuts

-gouda cheese

-precooked chicken strips

-salt and pepper

In a large skillet heat up the olive oil and add in the chopped garlic. Next add the chicken followed by beans, sundried tomatoes, and walnuts. Mix for several minutes on a low heat. Add the bean sprouts (add a lot even if it seems like too much. They settle a great deal).  Finally mix in your cooked pasta, some salt and pepper, and small chunks of gouda cheese. Delicious. The only things I bought were the beans, chicken, and bean sprouts. This was an excellent dish for clearing out some items I already had. The wholesome-ness reminds me of Friar Tuck’s Gnocchi
