Guac and Chicken Panini

When I’m feeling lazy I go to the store and buy a rotisserie chicken. Typically my laziness lasts several days and the chicken will last that too-how convenient!. Tonight I made this delicious panini from some leftover chicken.

As my readers know, I was out of the country this weekend enjoying the culinary genius of my pseudo sister-in-law LT (first night curried chicken and rice, third night seared pork loin with smashed potatoes and brussel sprouts with bacon and parmesan…yum). She excels in all things French and loves planning meals with the same enthusiasm and precision as Ina Garten. I have nothing but respect and awe for her. You can
imagine my chagrin when I returned to my own kitchen and realized she wasn’t there to cook for me! Laziness and inertia quickly ensued. The hubby and I decided the best way around it was to buy a rotisserie chicken and 2 sides (spinach and sicilian cauliflower). It felt homemade… but was ready in seconds. And the best part? Leftover chicken for the next night…

I tend to make a chicken panini the night after we have rotisserie chicken but I was getting tired of doing the same thing each time: roasted red peppers with mozzarella and chicken. So I decided to try something different…

Ingredients:

-strips of cooked rotisserie chicken (I used adobe spiced chicken)

-homemade or freshly made guacamole (I considered using a plain avocado but guacamole is easy to spread). My husband’s aunt Emily actually has a great guacamole recipe I’ll try to get for you.

-1 tomato, sliced

-monterey jalapeno pepper jack cheese, sliced

-slices of whole grain bread or rolls

without the chicken added yet

Heat up a panini press or grill. Create a sandwich of cheese, guacamole, chicken, and tomato. Cook on medium-high until cheese begins to melt. Eat hot! This is so delicious, especially with the moistness of the guacamole and cheese. Truly a meal to have again and again. Kids would like this too.
