Apple Muffins

As you can see by Summer’s recent bridal shower update, it’s been a busy week for me. And I have a backlog of recipes to post! But it’s chilly, it’s Sunday, and from where I’m sitting on my bed right now, there are about eight loads of dirty laundry staring me in the face. So I’m going to keep it fast and simple for now. Here are some tasty apple muffins for you, by way of Betty Crocker.

This recipe also includes a streusel topping, which you can see I skipped this time around. (Because I don’t own a pastry blender, and I’m really bad at the criss-cross method. My streusel sucks.) But here are the ingredients for the topping if you’d like to try it. (You should, it’s yummy.)

Topping:

1/4 cup all-purpose flour
1/4 cup packed brown sugar
1/4 tsp ground cinnamon
2 tbsp firm butter

To make the topping:

Mix flour, brown sugar, and cinnamon in a medium bowl. Cut in the butter, using a pastry blender, or by criss-crossing two knives, until crumbly. Set aside.

For the muffins, you’ll need:

3/4 cup of milk
1/4 cup of vegetable oil
1 large egg
2 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1 medium apple, peeled and chopped

Get cooking:

Preheat your oven to 400 degrees. Grease the bottom of medium sized muffin cups, or line with paper baking cups.  Mix milk, oil, egg, and chopped apple in a large bowl with a fork or whisk. Mix flour, sugar, baking powder, salt, and cinnamon together in a separate bowl. Add your dry ingredients to your moist ones all at once, and mix with a spatula until the dry mixture is just moistened. (Your batter will and should be lumpy). Divide your batter evenly into the muffin cups, and add a tablespoon of the streusel topping (if desired) on top of each. Bake for 25 to 30 minutes or until golden brown. Let stand for five minutes, then remove to a wire rack. Serve warm with lots of butter!

This is a nice breakfast to make on a weekend morning. It’s very quick and easy to mix up the ingredients, and your whole house will smell like apple cinnamon for the rest of the day. I was so into apple this past month, that I even caved and bought one of those caramel apple kits from the grocery store. Just microwave, dip, and set on a greased plate for safekeeping in the fridge. I don’t normally have a killer sweet tooth, but these have always been a weakness of mine…
