Chocolate Chip Graham Cracker Squares

Sorry it’s been so long since I posted. I have some recipes back-logged I will try to catch up on!

So my amazingly thin sister-in-law is also an amazingly awesome baker…how does this happen??? Fortunately, I’m an amazingly awesome eater so it creates this lovely triangle of baking input and output. Hubs and I visited a few weekends ago and she had these delectable treats on the kitchen island. They are DEADLY. There’s no butter in them though so I don’t feel as bad about it. They would also be a great treat to bring to a party because they look so professional but are very easy to make. I want to try a similar method with the confectioner’s sugar on some kind of lemon bar in the future.

I made a single batch but you can double this recipe and put it in a cake pan.

LT’s Chocolate Chip Graham Cracker Squares

Preheat the oven to 350. Combine the following in a bowl:

-6-8 ounces of chocolate chips or 1/2 chocolate 1/2 peanut butter (Note: I did half chocolate and half peanut butter chips …so good!)

-2 cups graham cracker crumbs.  You do NOT want to add more than 2 cups or the batter can be too dry. If anything you can go just under 2 cups. Lauren bought graham cracker crumbs in the baking aisle, but I couldn’t find any so I made my own in a food processor.

-1 can sweetened condensed milk

-1tsp vanilla extract

The batter is VERY sticky.

Spray a square pan with Pam. I used an 8X8 pan.

Bake for 30 minutes or until browned. (start checking at 25 minutes)

Let cool COMPLETELY

Cut into squares and toss with confectioners sugar (1/2 cup) in a large freezer bag. (It’s shake and bake – and I helped!)
